Sunlight dances across the Aegean, the air hums with salt and laughter, and the clink of ice in a tall glass signals something pure, golden, and alive: Andrea’s Greek Spritz.


Inspired by the warmth of a Mediterranean summer, this effervescent cocktail captures the essence of Greece in one glass — sun-sweet papaya, the bold spirit of Tsipouro, the citrus edge of lemon, and the elegant sparkle of fine wine. A spirited cousin to the Venetian classic, it carries the island soul — bright, balanced, and unapologetically refreshing.

Perfect for golden afternoons by the sea or rooftop evenings with friends, the Greek Spritz is more than a drink; it’s a moment of stillness wrapped in sunlight.


Serves: 1 (easily doubles or triples for sharing)


🌞 Ingredients:


  • 30 ml Tsipouro (Greek pomace spirit)

  • 30 ml Aperol or a Mediterranean-style bitter liqueur

  • 60 ml papaya juice (freshly pressed or blended ripe papaya)

  • Juice of ¼ fresh lemon

  • 90 ml chilled sparkling wine (Prosecco, Moschofilero, or any crisp dry tertiary sparkling wine)

  • Ice cubes


To Garnish

  • Lemon wedge

  • Small cubes of ripe papaya

  • Fresh thyme or rosemary sprig


🍸 Method:


  1. Prep the Glass

    Fill a large wine glass with plenty of ice — enough to chill the glass and keep the drink crisp.


  2. Mix the Base

    Pour in the Tsipouro, Aperol, papaya juice, and lemon juice. Stir gently with a bar spoon to marry the flavors without melting the ice too quickly.


  3. Add the Sparkle

    Top with sparkling wine and give it one slow, graceful swirl to combine — never shake, as you’ll lose the fizz.


  4. Garnish and Serve

    Garnish with a few papaya cubes, a wedge of lemon, and a fresh thyme sprig.Hold the glass to the light before you sip — the way the sun catches the amber and coral hues is pure joy.

🌿 Serving Tips:


  • Chill your papaya juice well in advance; the colder it is, the more refined the fizz will stay.

  • Try adding a tiny dash of honey syrup if your papaya is less ripe.

  • Pair with green olives or marinated feta cubes for a quick aperitivo companion.


🍾 Optional Twist:


For a soft, low-alcohol version, replace Tsipouro with sparkling water mixed with a splash of non-alcoholic Aperitivo. The papaya still shines, and the color stays vibrant.
