Fattoush Salad: A Lebanese Classic with A Garden’s Freshness

There’s something timeless about the way a good salad can capture the spirit of a meal — bright, balanced, alive. Fattoush, the celebrated Lebanese bread salad, is all that and more: a medley of crisp vegetables tossed with crunchy toasted pita and draped in a tangy lemon-sumac dressing that practically sings with freshness.


This is the kind of dish that feels both rustic and refined — bursting with garden flavor, yet elegant enough to serve alongside roasted meats or as the centerpiece of a light lunch. It’s a salad rooted in tradition, yet endlessly adaptable.


Serves: 4–6


🌿 Ingredients:


For the Salad:

  • 2 whole pita breads, toasted or fried until golden and broken into bite-size pieces

  • 3 cups chopped romaine lettuce

  • 1 cup diced cucumbers

  • 1½ cups cherry tomatoes, halved

  • 4 radishes, thinly sliced

  • 1 green bell pepper, diced

  • 2 scallions, chopped

  • ½ cup chopped flat-leaf parsley

  • ⅓ cup fresh mint leaves, torn


For the Dressing:

  • ¼ cup extra virgin olive oil

  • 3 tablespoons fresh lemon juice

  • 1 tablespoon red wine vinegar

  • 2 teaspoons ground sumac

  • 1 teaspoon pomegranate molasses (optional but authentic)

  • 1 small clove garlic, finely minced

  • Sea salt and freshly cracked black pepper, to taste


🥣 Instructions:


  1. Toast the pita

    Cut the pita into triangles, drizzle lightly with olive oil, and toast in the oven at 375°F (190°C) for about 8–10 minutes, or until crisp and golden. Set aside to cool.


  2. Make the dressing

    In a small bowl, whisk together olive oil, lemon juice, vinegar, sumac, pomegranate molasses, garlic, salt, and pepper until emulsified. Taste and adjust for acidity or seasoning as desired.


  3. Prepare the salad

    In a large mixing bowl, combine the lettuce, cucumbers, tomatoes, radishes, bell pepper, scallions, parsley, and mint.


  4. Dress and toss

    Pour the dressing over the vegetables and toss gently until coated. Right before serving, fold in the crispy pita pieces so they stay crunchy.


  5. Serve beautifully

    Spoon into a large ceramic serving bowl, sprinkle with extra sumac, drizzle with a touch more olive oil, and garnish with a few mint leaves for freshness.

Make it your own:


  • Add avocado or chickpeas for a heartier plate.

  • Use whole-grain pita for a nutty flavor.

  • For a vegan touch, replace honey or molasses with date syrup in the dressing.
