Granola Mousse with Fresh Fruit, Cardamom, Pistachio, Yoghurt & Honey

There’s a kind of luxury that doesn’t shout — it hums quietly, bright with sunshine and generous simplicity.This Granola Mousse is one of those quiet luxuries. An airy blend of thick Greek yogurt, honey, pistachios, and cardamom, it folds in fresh fruit and clusters of granola until every spoonful becomes both smooth and textured, light but deeply satisfying.
It’s breakfast reborn as dessert: cool, creamy, fragrant — a cloud of morning sweetness that feels as wholesome as it is indulgent.
Serves: 4–6
🌿 Ingredients:
Granola Mousse
1 ¼ cups thick Greek yogurt
¾ cup heavy cream (whipped to soft peaks)
¼ cup honey (preferably wildflower or Greek thyme honey)
½ teaspoon ground cardamom
½ teaspoon vanilla extract
½ cup toasted pistachios, roughly chopped
¾ cup crispy oat granola (unsweetened or lightly toasted)
1 cup assorted fresh fruit, diced (strawberries, raspberries, blueberries)
Optional Garnish
A few fresh berries or pistachio pieces
Light honey drizzle
🍋 Method:
1. Prepare the Cream Base
In a mixing bowl, whisk together the Greek yogurt, honey, vanilla extract, and ground cardamom until smooth and lightly fragrant.
2. Whip and Fold
Whip the heavy cream independently until soft peaks form.Fold the whipped cream gently into the yogurt mixture — this will transform it from thick and tart to light, mousse-like, and airy.
3. Add the Crunch and Fruit
Stir in the granola, chopped pistachios, and diced fruit. Don’t overmix — you want ribbons of color and texture through the mousse.
4. Chill and Serve
Spoon the mousse into glass dessert bowls. Chill for at least 1 hour to allow the flavors to infuse and the granola to soften slightly.
Just before serving, add a few jewel-like berries on top and drizzle with honey.

🌞 Serving Suggestion:
Serve chilled, ideally with mint tea or strong Greek coffee. For an extra hit of brightness, swirl in a little orange or rosewater before folding the cream.
