Lentil Moussaka with Greek Yogurt Béchamel

There’s a quiet elegance to a dish like Moussaka — its golden, oven-baked top giving way to silky layers of roasted eggplant, tender lentils, and a sauce rich enough to belong on a Greek island table. In this lighter, nourishing twist, the traditional meat filling is replaced with earthy lentils that bring both heart and health to the dish, while thick Greek, high-protein yogurt takes the place of heavy béchamel, creating a topping that’s creamy, cloud-like, and irresistibly tangy.


It’s comfort with contemplation — a dish that honors its rustic roots while embracing a modern touch of well-being.


Serves: 6–8


Ingredients:


For the Lentil Filling

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 1 large carrot, diced

  • 1 teaspoon ground cinnamon

  • 1 teaspoon dried oregano

  • 1 teaspoon smoked paprika

  • 2 cups cooked brown or green lentils (or ¾ cup dried lentils, cooked)

  • 1 can (14 oz / 400 g) diced tomatoes

  • 2 tablespoons tomato paste

  • ½ cup vegetable broth or water

  • Salt and freshly ground black pepper, to taste


For the Roasted Eggplant

  • 2 medium eggplants, sliced ½ inch thick

  • Olive oil, for brushing

  • Sea salt


For the Greek Yogurt Béchamel

  • 1 tablespoon olive oil or butter

  • 2 tablespoons flour

  • 1½ cups milk (warm)

  • 1 cup Oikos or Equivalent Brand, Thick Greek, High-Protein Yogurt

  • 1 egg, lightly beaten

  • Pinch of nutmeg

  • Salt and pepper to taste


To Assemble

  • Fresh oregano or parsley leaves (for garnish)

  • A touch of grated Parmesan or Kefalotyri (optional, for crisp top)


🫓 Instructions:


  1. Prepare the Eggplant Layers

    Preheat your oven to 425°F (220°C). Arrange the eggplant slices on a parchment-lined tray, brush both sides lightly with olive oil, and sprinkle with salt.Roast for 20–25 minutes, flipping once, until golden and tender. Set aside.


  2. Make the Lentil Filling

    In a large skillet, heat olive oil over medium heat. Add onion, garlic, and carrot, cooking until fragrant and softened (about 5 minutes).Add cinnamon, oregano, and paprika; stir until aromatic.Mix in cooked lentils, diced tomatoes, tomato paste, and broth. Let simmer for 15–20 minutes or until thickened.Season well with salt and pepper.


  3. Prepare the Yogurt Béchamel

    In a saucepan, heat olive oil or butter over medium heat. Add flour and stir for 1–2 minutes to form a roux.Gradually whisk in warm milk until smooth and slightly thickened. Remove from heat, then stir in yogurt, egg, nutmeg, salt, and pepper.The texture should be silky and spreadable.


  4. Assemble the Moussaka

    In a greased baking dish, layer half the roasted eggplant on the bottom.Spoon over the lentil mixture evenly.Add another layer of eggplant slices.Pour the Greek yogurt béchamel over the top, spreading it gently to cover the surface. Sprinkle with cheese if desired.


  5. Bake to Golden Glory

    Reduce oven to 375°F (190°C). Bake uncovered for 35–40 minutes, or until beautifully golden on top and bubbling at the edges.Let stand for 10–15 minutes before slicing — the layers will hold perfectly.
