Loukoumades Cheesecake Fusion with Rosemary Honey & Hazelnut Chocolate

Greece has always known how to turn simplicity into poetry — sunlight on stone, honey warming in the breeze, a spoon dipped into sweetness. The Loukoumades Cheesecake Fusion is precisely that poetry plated: a marriage of old-world tradition and modern indulgence.


Golden Greek loukoumades — crisp, cloud-like donut balls — rest atop a silky cheesecake scented with vanilla and lemon. A luxurious hazelnut chocolate spread flows gently over them, pooling into the cheesecake’s creamy contours, while a drizzle of rosemary-infused honey adds an aromatic shimmer. Crushed walnuts lend their rustic charm, evoking mountain groves and warm island kitchens.


It’s dessert as symphony — rich yet airy, Greek yet global, nostalgic yet new.


Serves: 8–10


🌸 Ingredients:


Base

  • 180 g crushed digestive biscuits or graham crackers

  • 80 g unsalted butter, melted

  • 2 tablespoons finely chopped walnuts


Cream Layer

  • 300 g cream cheese, softened

  • 200 ml heavy cream

  • 60 g caster sugar

  • 1 tablespoon Greek yogurt

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon


Loukoumades

  • 1 cup all-purpose flour

  • 1 teaspoon sugar

  • 1 teaspoon instant yeast

  • ½ teaspoon salt

  • ¾ cup warm water

  • 1 tablespoon olive oil

  • Neutral oil, for frying


Rosemary Honey Syrup

  • ½ cup Greek honey

  • 2 tablespoons water

  • 1 rosemary sprig, fresh


For the Topping

  • 4 tablespoons hazelnut chocolate spread (warm and glossy)

  • 2 tablespoons crushed walnuts

  • Extra honey, for drizzling

  • Fresh rosemary leaves (optional, for garnish)


🕊️ Method:


1. Prepare the Biscuit Base

Mix the biscuits, butter, and walnuts until crumbly and moist. Press into a lined springform pan and chill for 15 minutes.


2. Make the Cheesecake Layer

Beat the cream cheese, sugar, and lemon zest until smooth. Add vanilla and yogurt.Whip the heavy cream separately until soft peaks form, then gently fold into the cream cheese mixture. Spread over the biscuit base, smooth the surface, and refrigerate for 4 hours or until set.


3. Fry the Loukoumades

In a bowl, mix flour, sugar, yeast, salt, warm water, and olive oil. Stir into a smooth batter.Cover and let rise for 1 hour.Fry tablespoon-sized portions in hot oil until golden brown and crisp. Drain on paper towels.


4. Make the Rosemary Honey Syrup

Warm the honey, water, and rosemary together over low heat for 5 minutes. Remove rosemary before serving.


5. Assemble the Fusion

Place the chilled cheesecake on a serving plate. Stack the warm loukoumades on top like golden jewels.Pour over the warm hazelnut chocolate spread, letting it cascade naturally down the sides.Drizzle with rosemary honey syrup and sprinkle generously with crushed walnuts.


6. The Finishing Touch

Use a few rosemary leaves as garnish for a fragrant, elegant finish. Serve immediately, ideally by the pool with the sound of water echoing old stones.
