Mediterranean Goat’s Cheese & Beet Salad with Strawberries and Rye Croutons

There’s a certain poetry to a salad like this — where earthy beets meet creamy goat’s cheese, sweet strawberries dance beside toasted walnuts, and every bite feels both rustic and refined. The Mediterranean has long mastered the balance between bold flavors and simple beauty, and this salad is a perfect reflection of that harmony.


The contrast of textures — crisp greens, tender roasted beets, crumbly cheese, and crunchy rye croutons — all tied together with a glossy balsamic vinaigrette, makes this a dish worthy of both the home table and the glossy pages of a food magazine.


Serves: 4


🌿 Ingredients:


Salad Base

  • 2 medium red beets, roasted until tender, peeled, and quartered

  • 2 medium golden beets, roasted, peeled, and quartered

  • 4 cups baby mixed greens (arugula, baby spinach, and red leaf lettuce)

  • ½ cup fresh strawberries, hulled and sliced

  • ⅓ cup creamy goat’s cheese, crumbled

  • ⅓ cup toasted walnuts, roughly chopped

  • 1 cup rye bread cubes, toasted or sautéed in olive oil until crisp


Balsamic Vinaigrette

  • 3 tablespoons extra-virgin olive oil

  • 1½ tablespoons aged balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey (or pomegranate molasses for depth)

  • Pinch of sea salt

  • Freshly cracked black pepper, to taste


🥣 Instructions:


  1. Roast the Beets

    Preheat your oven to 400°F (200°C). Trim and rinse the beets, drizzle them lightly with olive oil, and wrap in foil. Roast for 40–50 minutes, or until tender when pierced with a knife. Allow to cool, then peel and cut into wedges.


  2. Prepare the Croutons

    Slice rye bread into cubes, toss with a drizzle of olive oil, salt, and pepper, then toast in the oven for 10 minutes until crisp and golden. Set aside to cool.


  3. Make the Vinaigrette

    In a small jar or bowl, whisk together olive oil, balsamic vinegar, mustard, honey, salt, and pepper until emulsified. Taste and adjust seasoning as desired.


  4. Assemble the Salad

    On a large serving platter, spread the mixed greens. Nestle in the roasted beets and strawberries. Sprinkle with crumbled goat cheese and walnuts.


  5. Dress and Finish

    Drizzle the balsamic vinaigrette over the salad, toss gently, and scatter the rye croutons over the top just before serving to preserve their crunch.

  • Substitute pecans for walnuts for a softer crunch.

  • Add roasted shallots or orange supremes for an extra burst of flavor.
