Beef souvlaki is a classic Greek dish that brings together tender, marinated meat grilled to perfection and served with fresh, vibrant accompaniments. This recipe captures the essence of Mediterranean flavors with juicy beef skewers, cooling tzatziki sauce, and soft pita bread. Whether you’re planning a casual weeknight dinner or a weekend gathering, these beef souvlaki skewers offer a satisfying meal that’s both simple and impressive.

Serves: 4

Ingredients:

  • 1.5 pounds (700g) beef sirloin or ribeye, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • Juice of 1 lemon

  • 1 tablespoon red wine vinegar

  • 2 teaspoons dried oregano

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • Salt and freshly ground black pepper to taste

  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes before grilling)

Fresh Tzatziki Sauce

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and excess water squeezed out

  • 2 cloves garlic, finely minced

  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Additional Ingredients

  • 4 warm pita breads

  • Sliced red onions

  • Cherry tomatoes, halved

  • Fresh parsley or mint for garnish

  • Lemon or lime wedges for serving

Instructions:

Preparing the Beef Marinade

  1. Start by combining olive oil, minced garlic, lemon juice, red wine vinegar, oregano, cumin, smoked paprika, salt, and pepper in a large bowl.

  2. Whisk the ingredients together until well blended.

  3. Add the beef cubes and toss to coat evenly.

  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, ideally overnight. This allows the beef to absorb the spices and become tender.

Making the Tzatziki Sauce

  1. While the beef marinates, prepare the tzatziki sauce.

  2. Grate the cucumber and press out as much moisture as possible using a clean kitchen towel or paper towels.

  3. In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and olive oil.

  4. Season with salt and pepper to taste.

  5. Chill the sauce in the refrigerator until ready to serve. The cool, creamy tzatziki balances the smoky, spicy flavors of the beef.

Assembling and Grilling the Skewers

  1. Thread the marinated beef cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

  2. Preheat your grill or grill pan to medium-high heat.

  3. Place the skewers on the grill and cook for about 3 to 4 minutes per side, depending on your preferred doneness.

  4. Turn the skewers carefully to get a nice char on all sides without overcooking. The beef should be juicy and tender with a slight smoky crust.

Serving Suggestions:

Serve the beef souvlaki skewers hot off the grill with warm pita bread on the side. Add sliced red onions and cherry tomatoes for freshness and crunch. Spoon generous amounts of tzatziki sauce over the meat or use it as a dip. Garnish with chopped parsley or mint and offer lemon wedges for an extra burst of citrus. This combination creates a balanced meal with savory, tangy, and fresh elements.

Tips for Perfect Beef Souvlaki:

  • Choose the right cut: Sirloin or ribeye works best for souvlaki because they stay tender and juicy after grilling. Avoid lean cuts that can dry out quickly.

  • Marinate long enough: Allow at least 2 hours for the marinade to penetrate the meat. Overnight marinating yields the best flavor.

  • Don’t overcrowd the skewers: Leave space between beef cubes to ensure even cooking and prevent steaming.

  • Use fresh herbs: Fresh oregano or dill adds authentic flavor to the marinade and tzatziki.

  • Control the heat: Grill over medium-high heat for a nice sear without burning the meat.

Variations to Try:

  • Swap beef for lamb or chicken for a different take on souvlaki.

  • Add vegetables like bell peppers, cherry tomatoes, or red onions to the skewers for extra color and flavor.

  • Use pita pockets to make souvlaki wraps with lettuce, tomatoes, and tzatziki.

  • Spice up the marinade with a pinch of chili flakes or cayenne pepper for heat.
