For the Lamb Shank Stew
4 meaty lamb shanks (about 1½ lbs each)
Salt and freshly ground black pepper
3 tablespoons olive oil
1 large onion, finely diced
4 garlic cloves, minced
2 medium carrots, sliced into thick rounds
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon sweet paprika
½ teaspoon cinnamon
¼ teaspoon chili flakes (optional for heat)
2 tablespoons tomato paste
1 can (14 oz / 400 g) crushed or diced tomatoes
1½ cups beef or chicken stock
1 cup cooked or canned chickpeas, drained and rinsed
2 sprigs fresh rosemary or thyme
1 bay leaf
To Finish
Fresh parsley or mint, finely chopped
Lemon wedges for serving
Drizzle of extra virgin olive oil

Prepare the Lamb
Pat the lamb shanks dry and season generously with salt and pepper.In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat. Brown each lamb shank on all sides until caramelized, about 10 minutes total. Remove and set aside.
Build the Aromatic Base
In the same pot, lower the heat slightly and add the onions and carrots. Sauté until softened and golden. Stir in the garlic and tomato paste, cooking for 1–2 minutes until fragrant.
Add the Spices
Sprinkle in cumin, coriander, paprika, cinnamon, and chili flakes. Mix well — the aroma should be beautifully warm and earthy.
Deglaze and Simmer
Pour in the crushed tomatoes and stock, scraping the bottom to release all those delicious browned bits. Return the lamb to the pot along with the chickpeas, rosemary, and bay leaf. Bring to a gentle simmer.
Braise to Perfection
Cover the pot with a lid and transfer to a preheated oven at 325°F (160°C). Cook for 2½ to 3 hours, turning occasionally, until the lamb is incredibly tender and the sauce has thickened.
Finish and Serve
Remove the bay leaf and herb stems. Taste and adjust seasoning — a small squeeze of lemon will bring the whole dish to life.Serve the lamb shanks nestled in their rich tomato stew, topped with chopped parsley and a drizzle of olive oil.
