There’s something timeless about smoked salmon — the gentle whisper of the sea kissed by smoke and salt. Pair it with toasted focaccia, creamy dill cheese, and a silk-rimmed fried egg, and you have a brunch dish that feels both indulgent and effortless.


This Smoked Wild Salmon with Fried Egg on Grilled Focaccia is the kind of dish that bridges sophistication and comfort — earthy, velvety, and glowing with Mediterranean warmth. Each bite balances soft and crisp, savory and sweet — thanks to the generous swipe of apricot-onion jam that hums beneath layers of salmon and avocado.


A handful of arugula adds a peppery spark, while Sweety Drop peppers bring a jewel-like burst of color and gentle sweetness. Topped with a sunshine-bright egg and a dash of sea salt, this is brunch at its most poetic.


Serves: 2 (generous portions)


🌿 Ingredients:


For the Dill Cream Cheese

  • ½ cup cream cheese, softened

  • 1 tablespoon Greek yogurt

  • 1 tablespoon chopped fresh dill

  • ½ teaspoon lemon zest

  • Crack of black pepper

  • Pinch of salt


For the Apricot-Onion Jam

  • 1 tablespoon olive oil

  • 1 small red onion, finely diced

  • 4 dried apricots, finely chopped

  • 1 teaspoon honey

  • ½ teaspoon white balsamic vinegar

  • Salt to balance


For the Assembly

  • 2 slices focaccia, halved and lightly grilled

  • 4 ounces wild smoked salmon

  • ½ ripe avocado, thinly sliced

  • 1 cup fresh arugula

  • 6–8 Sweety Drop peppers (or sweet cherry peppers), halved

  • 2 eggs, fried sunny-side-up

  • Olive oil and sea salt, for finishing


🍳 Method:


1. Prepare the Dill Cream CheeseIn a small bowl, mix the softened cream cheese, yogurt, dill, lemon zest, and pepper until smooth and airy. Chill until ready to use.


2. Create the Apricot-Onion JamWarm olive oil in a skillet over low heat. Add the onion and cook slowly, about 10 minutes, until translucent and glossy. Stir in the apricots, honey, and vinegar. Let the mixture cook another 5 minutes until soft, sticky, and golden. Season lightly with salt and allow to cool.


3. Grill the FocacciaBrush focaccia slices lightly with olive oil and grill in a pan or on a griddle until crisped edges form and faint grill marks appear.


4. Assemble the TartinesSpread each slice of grilled focaccia generously with the dill cream cheese. Spoon a delicate layer of apricot-onion jam over the top.


Arrange smoked salmon slices in tender folds, top with avocado and a sprinkling of arugula. Scatter the Sweety Drop peppers around for a bright pop of flavor and color.


5. Finish with the EggFry each egg sunny-side-up in a little butter or olive oil until just set and edges are lightly crisp.Place the egg atop the focaccia and season with sea salt, cracked pepper, and a faint drizzle of olive oil.
