There’s something undeniably soulful about chicken shawarma. Its tantalizing aroma, smoky char, and balanced spices bring together centuries of culinary tradition in a single bite. Paired with crisp golden fries, pillowy pita, and luscious tzatziki — it’s both comfort food and an adventure.
Whether served up as a wrap for a quick weeknight dinner or plated elegantly like in this magazine feature, shawarma captures the spirit of hospitality and togetherness that defines the best of Middle Eastern cuisine.
The Essence of Shawarma
At its heart, shawarma is all about marination and slow cooking. Layers of thinly sliced, spice-rubbed chicken are traditionally roasted on a vertical spit, where each rotation deepens the flavor and locks in tenderness.
In this home-friendly version, the magic happens in your oven or on a stovetop grill pan — producing charred edges and juicy interiors that rival any street vendor’s offering.
Serves: 4
Ingredients:
For the Chicken Shawarma
1 ½ lbs (700g) boneless, skinless chicken thighs
3 tbsp plain Greek yogurt
3 tbsp olive oil
3 cloves garlic, minced
Juice of 1 lemon
1 ½ tsp ground cumin
1 tsp ground coriander
1 tsp paprika
½ tsp turmeric
½ tsp ground cinnamon
½ tsp cayenne pepper (optional, for heat)
1 tsp salt
½ tsp black pepper
For the Tzatziki Sauce
1 cup Greek yogurt
½ cucumber, finely grated and drained
2 cloves garlic, minced
1 tbsp olive oil
Juice of ½ lemon
1 tbsp fresh dill or mint, finely chopped
Salt to taste
For the Fries
3 medium russet potatoes (or store-bought fries)
2 tbsp olive oil
Sea salt and paprika to season
For the Sauces
Hot sauce: Use a Middle Eastern-style chili paste or sriracha for a kick.
Sweet garlic sauce: Combine ¼ cup mayo, 1 tbsp honey, 1 minced garlic clove, and 1 tsp lemon juice.
To Serve
Fresh pita bread, warmed
Lemon wedges and parsley for garnish
Instructions:
Marinate the Chicken
In a large bowl, whisk together the yogurt, olive oil, lemon juice, garlic, and all spices. Add the chicken thighs, turning to coat evenly. Cover and refrigerate for at least an hour.
Cook the Chicken
Preheat grill pan or oven to 425°F (220°C). Grill or roast chicken for 20–25 minutes until caramelized and cooked through. Let rest, then slice thinly across the grain.
Prepare the Fries
Toss potatoes with olive oil, salt, and paprika. Bake at 425°F for 30 minutes (flipping halfway) or air-fry until golden and crispy.
Mix the Tzatziki
Combine all tzatziki ingredients in a bowl. Chill before serving for a cool, creamy finish.
Assemble the Platter
On a rustic wooden board or large plate, layer sliced chicken, golden fries, and warm pita triangles. Add small bowls of tzatziki, hot sauce, and sweet garlic sauce. Garnish with lemon wedges and parsley.
Andrea’s Tips for Perfection:
Overnight marination takes flavor from good to unforgettable.
Charred edges equal authentic shawarma flavor — don’t shy away from high heat.
Balance your sauces: creamy cooling tzatziki alongside fiery hot sauce creates harmony on the palate.
Serving Suggestion:
Pair this shawarma platter with a crisp Lebanese-style salad or a side of hummus and grilled vegetables for a complete feast. A cold glass of mint lemonade makes for the perfect refreshing companion.
