The Rustic Mediterranean Grazer

The Rustic Mediterranean Grazer is an appetizer board celebrating the abundance of Mediterranean coastal foods, built around the golden lupini bean. Every item enters the board not merely as food but as a story of salt air, olives ripened by the sea, and grapes kissed by sun.


Serves 4


Ingredients:


  • 1 cup lupini beans, marinated overnight in a mix of orange zest, olive oil & rosemary

  • ½ cup Mediterranean olives, mixed varieties for color

  • Small bunch red grapes and green Muscat grapes

  • 4 oz sliced soppressata

  • 4 oz salami cotto

  • 4 oz aged Manchego and a brie wheel

  • Toasted fig slices or fig jam

  • Multi-grain crackers or thinly cut baguette rounds

  • Olive oil, lemon zest, smoked paprika pinch


Instructions:


Awaken the Palate

1.      Toss lupini beans in olive oil, lemon zest, and rosemary.

 

2.      Let them rest as you prepare the rest of the platter.

 

Frame the Canvas

1.      Place brie and manchego diagonally on a wide wooden tray.

 

Fold & layer

1.      Twist soppressata and salami into loose rosettes, nestling them around the cheeses.

 

Introduce Life

1.      Add grapes still on the vine, making sure they hang naturally for that “harvest touch.”

 

Depth and Darkness

1.      Pour olives between meats, drizzle lightly with oil.

 

Accentuate

1.      Scatter toasted fig slices or a dollop of fig jam near the brie.

 

2.      Add crackers around the edges like a frame.

 

Final Grace

1.      A sprinkle of smoked paprika over beans and a rosemary sprig at center.

 

2.      Serve with chilled rosé or sparkling lemonade.

Best enjoyed outdoors — a vineyard picnic, sunset light, conversation humming in the background.
