Turkish Pide: The Anatolian Flatbread that Feeds the Soul

Somewhere between a pizza and a pie, the iconic Turkish pide is a masterpiece of Mediterranean simplicity. This boat-shaped bread cradles vivid fillings — from fragrant spiced lamb to melting cheese and silky spinach — all baked to golden perfection. In Turkey, pide is a dish to be shared, carried steaming to the table and sliced among friends. It’s rustic, communal cooking at its most irresistible.
Baked on a hot stone or tray, the dough puffs just enough to form a flaky, chewy crust, while the toppings shimmer with olive oil and herbs. Served with wedges of lemon and a dollop of garlicky yogurt, this is pure Anatolian comfort on a plate.
Makes: 3–4 pides
🌾 Ingredients:
For the Dough
2¼ teaspoons (7 g) instant yeast
1 teaspoon sugar
¾ cup warm water (about 100°F / 38°C)
2 cups all-purpose flour
1 teaspoon sea salt
2 tablespoons olive oil (plus extra for brushing)
For the Fillings (choose or mix & match)
1️⃣ Spiced Lamb & Tomato:
200 g ground lamb
1 small onion, finely diced
1 small tomato, diced
1 tablespoon tomato paste
½ teaspoon ground cumin
½ teaspoon paprika
Salt & pepper to taste
Chopped parsley, for garnish
2️⃣ Spinach & Feta with Egg:
2 cups fresh spinach, sautéed in olive oil until wilted
½ cup crumbled feta
1 free-range egg (cracked on top before baking)
Black pepper, to taste
3️⃣ Three-Cheese Blend:
½ cup shredded mozzarella
¼ cup shredded kashar (or mild cheddar)
2 tablespoons ricotta or soft white cheese
Chopped parsley or mint, for garnish
🍞 Instructions:
Make the Dough:
In a small bowl, combine yeast, sugar, and warm water. Let sit for 5–10 minutes until foamy.In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Knead for 8–10 minutes until smooth and elastic.Cover and let rise for 1 hour, or until doubled in size.
Prepare the Fillings:
For the lamb filling: Sauté onion and lamb in olive oil until browned. Add tomato, tomato paste, and spices. Cook until thick and fragrant.
For spinach & feta: Simply fold cooked spinach with crumbled feta.
For cheese: Combine all cheeses in a bowl and mix lightly.
Shape the Pide:
Preheat the oven to 450°F (230°C). Place a pizza stone or baking tray inside to heat.Punch down the dough and divide into 3–4 balls. Roll each into an oval about 10–12 inches long.Lay the dough on parchment paper, spread your chosen filling down the center, and fold the edges slightly inward, pinching the ends to create the classic boat shape.
Bake the Pide:
Brush the crust edges with olive oil or an egg wash for shine.Slide onto the hot tray or stone and bake for 12–15 minutes, until golden brown and puffed.If using egg, crack it over the filling halfway through baking so it just sets with a glossy yolk.
Serve & Enjoy:
Remove from the oven and brush the edges with olive oil. Garnish with fresh herbs and a squeeze of lemon. Serve immediately with mint yogurt or tzatziki on the side.
