Za’atar Sesame Bread: A Loaf of Levantine Sunshine

Few aromas rival that of freshly baked bread — except, perhaps, when it’s kissed with the warm, herbaceous perfume of za’atar and toasted sesame. This bread, golden and fragrant, is a culinary celebration of the Levant — a staple elevated by olive oil, earthy spices, and a touch of rustic elegance.
Traditionally enjoyed with a drizzle of olive oil or a spoonful of labneh, Za’atar Sesame Bread bridges the familiar comfort of homemade bread with the exotic charm of East Mediterranean flavors. Whether braided, twisted, or baked as simple rolls, it’s the kind of bread that feels both humble and extraordinary — perfect for tearing, dipping, and sharing.
Makes: 2 Medium Braided Loaves
🫓 Ingredients:
For the Dough
2¼ teaspoons (7 g) instant yeast
1 teaspoon sugar
¾ cup warm water (around 100°F / 38°C)
2½ cups all-purpose flour (plus extra for kneading)
1 teaspoon sea salt
3 tablespoons olive oil
2 tablespoons plain yogurt (for tenderness)
For the Filling & Topping
3 tablespoons za’atar spice blend
3 tablespoons olive oil
2 tablespoons sesame seeds (white or mixed)
1 egg, beaten (for brushing)
Optional: pinch of sumac or nigella seeds for garnish
🍽️ Instructions:
Activate the Yeast
In a small bowl, combine warm water, sugar, and yeast. Stir and let it rest for 5–10 minutes, until frothy and aromatic.
Prepare the Dough
In a large bowl, mix flour and salt. Add the yeast mixture, olive oil, and yogurt. Stir until a rough dough forms.Transfer to a lightly floured surface and knead for 8–10 minutes until the dough becomes smooth, elastic, and slightly tacky.
First Rise
Place the dough in an oiled bowl, cover loosely with a damp towel, and let rise in a warm place for about 1 hour or until doubled in size.
Form and Fill
Punch down the dough and divide it into two portions. Roll each portion into a rectangle about ¼ inch thick.Mix the za’atar and olive oil into a spreadable paste, then brush it generously over each rectangle.
Shape the Bread
Roll the dough lengthwise into a tight log, then slice it in half lengthwise to reveal the za’atar-filled layers. Twist the two strands together, keeping the filling visible, and form into a braid. Transfer to a parchment-lined baking sheet.
Final Rise
Cover the loaves with a clean cloth and let rise again for 20–30 minutes as the oven preheats to 375°F (190°C).
Bake to Perfection
Brush with beaten egg, sprinkle sesame seeds and optional nigella or sumac.Bake for 22–25 minutes, or until golden brown and fragrant.
Serve Warm
Let cool slightly before tearing apart. Serve with olive oil, labneh, or alongside grilled vegetables and dips.
