The Rustic Mediterranean Grazer

By Andrea McGurran
Published 14 April 2026

The Rustic Mediterranean Grazer is an appetizer board celebrating the abundance of Mediterranean coastal foods, built around the golden lupini bean. Every item enters the board not merely as food but as a story of salt air, olives ripened by the sea, and grapes kissed by sun. 🌿 The Rustic Mediterranean Grazer Ingredients (serves 4–6): •1 cup lupini beans, marinated overnight in a mix of orange zest, olive oil & rosemary •½ cup Mediterranean olives, mixed varieties for color •Small bunch red grapes and green Muscat grapes •4 oz sliced soppressata •4 oz salami cotto •4 oz aged Manchego and a brie wheel •Toasted fig slices or fig jam •Multi-grain crackers or thinly cut baguette rounds •Olive oil, lemon zest, smoked paprika pinch Method: 1.Awaken the palate: Toss lupini beans in olive oil, lemon zest, and rosemary. Let them rest as you prepare the rest of the platter. 2.Frame the canvas: Place brie and manchego diagonally on a wide wooden tray. 3.Fold & layer: Twist soppressata and salami into loose rosettes, nestling them around the cheeses. 4.Introduce life: Add grapes still on the vine, making sure they hang naturally for that “harvest touch.” 5.Depth and darkness: Pour olives between meats, drizzle lightly with oil. 6.Accentuate: Scatter toasted fig slices or a dollop of fig jam near the brie. Add crackers around the edges like a frame. 7.Final grace: A sprinkle of smoked paprika over beans and a rosemary sprig at center. Serve with chilled rosé or sparkling lemonade. Atmosphere: Best enjoyed outdoors — a vineyard picnic, sunset light, conversation humming in the background.

Tuscan Herb Cloud on Dark Bread

By Andrea McGurran
Published 14 April 2026

Tuscan Herb Cloud on Dark Bread is a silky, savory whip that captures the earthy mood of countryside breakfasts — one where simplicity and depth coexist in every bite. Ingredients (serves 2 people): •¾ cup fresh ricotta cheese (or whipped goat’s cheese for a stronger kick) •1 tbsp finely minced roasted red pepper •1 tbsp black olive tapenade or chopped cured olives •1 tsp chopped thyme and oregano mix •½ tsp cracked black pepper •½ tsp honey or fig syrup (for subtle sweetness) •1 tsp lemon juice •4 slices rustic rye or pumpernickel bread •Olive oil, for brushing Method — Simple but Soulful: 1.In a bowl, whip ricotta until light and smooth. 2.Stir in roasted pepper, olive tapenade, herbs, and lemon juice. Balance salt; the olives will already bring brine. 3.Add a whisper of honey to round out the flavors — the secret to Mediterranean spreads that dance between savory and sweet. 4.Brush bread slices with olive oil and toast until crisp-edged but still soft. 5.Spread the “herb cloud” generously over the warm bread. 6.Top with a flourish of fresh thyme and a few drops of olive oil for sparkle. Serve with: A handful of peppery arugula and a glass of chilled white wine or iced herbal tea. Vibe: It’s the kind of food you’d pack for a late morning under olive trees — unpretentious, aromatic, unforgettable.

Sunlit Orchard Grazing Board

By Andrea McGurran
Published 14 April 2026

Sunlit Orchard Grazing Board is a blend of farmstead flavors where Mediterranean charm meets cozy kitchen comfort. It's designed to awaken the senses with color, crunch, and contrast. Serves: 2 hungry hearts or 4 light grazers Ingredients: •1 crisp Gala or Honeycrisp apple, sliced thin for juicy bites •A fresh baguette, cut on the bias to maximize that crunchy surface •5–6 slices country salami (or any artisan cured meat you love) (turkey, chicken, or beef salami for kosher options) •6 oz buttery cheese such as Fontina, or cubed herb Havarti •A handful of smoked almonds for earthy crunch •2 mandarins or clementines, left whole for visual brightness •¼ cup blackberry jam (the sweeter, the better) •1 drizzle raw honey •A pinch of fleur de sel or flaky sea salt (kosher salt for a kosher option) Method - Assembly — The Art of Abundance: 1.Start with your centerpiece: a small jar or bowl of jam. It’s the heart of this board. 2.Fan out those apple slices like sunbeams. Their crispness contrasts perfectly with the soft cheese. 3.Layer the baguette slices nearby — they’re your canvas for flavor. 4.Tuck in salami circles like little petals, overlapping them in a ripple for visual rhythm. 5.Scatter almonds freely; they should look natural, not placed. 6.Add cubes of cheese, a pop of citrus with your mandarins, then drizzle honey over the top for a glossy, golden sheen. 7.Finish with a dust of sea salt — the tiny detail that bridges sweet and savory. Serving Note: Enjoy with chilled rosé, sparkling cider, or a herbal iced tea. This board is not just a meal — it’s a pause in the day that feels like sunlight catching on glass.
