Serves: 2 dreamers Ingredients: For the Honey Cream •½ cup cold heavy cream •1 tbsp wildflower honey •¼ tsp vanilla extract •A pinch of sea salt For the Berry Base •1 ½ cups fresh raspberries (washed and lightly patted dry) •1 tsp sugar or agave (optional — to brighten tartness) •½ tbsp lemon juice For the Tea Biscuits (makes 6 small rounds) •½ cup rolled oats •½ cup all-purpose flour •2 tbsp light brown sugar •¼ tsp baking soda •3 tbsp cold butter, cubed •2 tbsp milk or cream •Pinch of salt To Serve •A few thin apple slices or small apple wedges •Wildflowers or herbs for garnish (optional, aesthetic) Method: 1.Make the Biscuits: •Preheat oven to 180 °C / 350 °F. •Combine oats, flour, sugar, baking soda, and salt in a bowl. •Rub in butter with fingertips until crumbly. •Add milk until dough holds together. •Roll to ¼ inch thick, cut into rounds, and bake 12–14 minutes or until golden edges appear. •Cool on a rack. 2.Prepare the Honey Cream •Whip cream, honey, vanilla, and salt until soft, dreamy peaks form. •Store chilled while preparing the fruit. 3.Marry the Berries •In a small bowl, toss raspberries gently with lemon juice and sugar if needed. •Let them rest 5 minutes to glisten and release their natural juice. 4.Plate the Moment •Place a spoonful of honey cream in a small bowl or ramekin. •Top generously with raspberries. •Add a few apple slices on the side for crunch and fragrance. 5.Complete the Scene •Serve with the oat biscuits, warm tea, and sunlight if possible.
