Ember Kiss Bites

Ember Kiss Bites are small, graceful, and impossibly flavorful sesame soba and charred tofu appetizer cups. Each bite balances smoky tofu, chilled soba silk, and bright chile heat in one elegant arc. Makes: 12–15 bites Ingredients: For the Tofu Char •½ block firm tofu, pressed dry and sliced into ¾″ squares •1 tsp soy sauce •½ tsp sesame oil •½ tsp maple syrup •½ tsp cornstarch •Pinch smoked paprika •Dash black sesame seeds For the Soba Tangle •3 oz soba noodles •1 tsp sesame oil •1 tsp rice vinegar •½ tsp soy sauce •½ tsp mirin or honey •¼ tsp freshly grated ginger •1 small clove garlic, finely grated For Garnish •Thin red chili slices •Fresh cilantro leaves •Chopped scallions •Toasted sesame mix (white & black) Method - the assembly ritual: 1.Sear the Soul •Toss tofu in soy, sesame oil, maple, cornstarch, and paprika. •Pan-sear or oven-roast until the edges caramelize. •Sprinkle with black sesame while warm. 2.Silken Threads •Boil soba noodles until tender; rinse in cold water. •Toss with sesame oil, rice vinegar, ginger, garlic, and soy. •Cut noodles into 2-inch strands for tidy bites. 3.Build the Bite •Spoon a small nest of soba into a crispy wonton cup, cucumber round, or Asian soup spoon. •Place one tofu cube atop the noodles. •Adorn with a slice of red chili, a leaf of cilantro, and a sprinkle of sesame. 4.Serve Like Firelight •Arrange the bites on a dark slate board so colors ignite against the surface. •Serve at room temperature, with a dab of chili oil nearby for daring guests.
